Grilled Pork Ribs with Garlic

Ribs and garlic, choose purple garlic;

Soak the ribs in water for 3 to 4 hours in advance, change the water 3 or 4 times in between, soak in bleeding water and impurities;

Wash, remove and drain, and use kitchen paper or sterile towel to absorb moisture;

Add oyster sauce, rice wine, green onion, ginger and garlic slices, and marinate for 15 minutes;

Peel the garlic cloves from the garlic, wash and dry the water;
6.
Cut the green onion leaves into cubes for later use.

Start the frying pan, add garlic cloves in the hot pan with cool oil, stir-fry slowly until the surface of the garlic cloves is golden brown, set aside;

Leave the crude oil in the pot, add the marinated ribs and the onion, ginger and garlic for marinating, stir-fry on low heat until the ribs change color;
9.
Add a proper amount of boiling water, just surpass the ribs;

Add teriyaki sauce;

Add freshly ground pepper;

Turn to high heat and bring to a boil, change to medium and low heat, cover the pot and simmer;

Simmer until the soup is thick, add the fried garlic cloves, stir-fry on high heat to collect the juice;
14.
Turn off the heat, add the diced shallots, and start the pot.
Tips:
1. The garlic needs to be fried until the skin is crisp and yellow. If you want more flavor, you can cut the garlic into slices;
2. If you don't have teriyaki sauce, you can use 1 teaspoon dark soy sauce, 2 teaspoon light soy sauce, 1 teaspoon oyster sauce, and 1 teaspoon sugar instead.
3. Soy sauce and oyster sauce are salty, so there is no need to add salt.
