Grilled Ribs with Shiitake Mushroom

First prepare the ingredients as shown in the picture

As shown in the picture, prepare the auxiliary materials as shown in the list

The ribs are soaked in clean water for half an hour, and the water can be changed many times in the middle

Wash the mushrooms, peel and cut in half

After soaking, wash the ribs, turn on the pot under cold water (note that it must be a pot under cold water)

Skim the blood foam after boiling

Put the pepper, star anise, and dried chili into the seasoning box and put it in the pressure cooker (I prefer the ribs to be rotten, so use the pressure cooker)

Put the seasoning box (prepared in step 7), green onions (cut in half), ginger (sliced), cooking wine in the pressure cooker

Pour the spare ribs with blood foam and bone broth into a pressure cooker (no residue from the soup base)

Pressure cooker for 20-25 minutes

Turn on the pressure cooker and put in the mushrooms (I like the mushrooms to be slightly soft)

Continue to suppress for 10 minutes

Separate the mushrooms and spare ribs for use (the mushrooms can also be pressed without a pressure cooker depending on personal taste), and the bone broth is reserved

Warm oil in the wok and put rock sugar

Use a spatula to gently break the rock sugar (the rock sugar with warm oil is easy to break)

Fry the rock sugar until it becomes syrup

Pour in the ribs (the oil is easy to splash, try to cover with the lid), stir fry a few times, add the dark soy sauce and continue to stir fry

Add the mushrooms and stir fry

Pour the bone broth in the pressure cooker into the wok (don't need to be all about the same level as the vegetables, don't need to have the vegetables) add salt and chicken powder. Cover the pot and let it sit for 10 minutes, and it will be enough after the pot is heated and the soup is collected.

After the soup is collected, it is out of the pot
Tips:
My daughter-in-law loves to eat soft and rotten ribs, so she is on the pressure cooker. Friends who do not want to eat rotten ribs can omit the pressure cooker step. After the ribs are boiled under cold water to remove the blood foam, they can continue to simmer for a while. Stir-fried vegetables with sugar is the key. Don’t stir-fry, and don’t find it difficult. When the sugar is completely melted, the syrup will obviously change color in a short period of time. That’s it.
