Stir-fried Hor Fun is a specialty snack in Guangdong. It can be eaten in high-end restaurants or delicious food stalls. It is also the first choice for many families in Guangdong for breakfast and supper.
Today, I have a fried Zhaihe. Zhaihe means vegetarian, without any meat dishes.
This is what I do from snacks to big ones, and I feel delicious no matter how I make them.

1. Prepare the ingredients

2. Boil an appropriate amount of water in the pot, put the bean sprouts in and mix twice and immediately pick up the clean water (you can also directly stir-fry without blanching. Due to current food safety issues, I usually use boiling water)

3. Add oil to the hot pan, put the garlic into the saute

4. Put the bean sprouts into the stir-fry a few times

5. Add pho and stir fry with chopsticks and spatula at the same time (shaking with chopsticks will not make it too broken)

6. Stir-fry until hot, add salt, soy sauce and oyster sauce, mix well

7. Sprinkle with chopped green onion

Tips:

1. If the bean sprouts are blanched, don't take too long, just put them in and pick them up immediately.
2. Shake the rice noodles with chopsticks so that they will not be too broken when they are fried.
