Guizhou Classic Dishes——【sour Soup Hoof Flower】

Wash kidney beans one day in advance and then soak them in clean water, wash and chop pig's feet into small pieces;

Cut ginger into slices and granules, peel and cut garlic into granules, peel and chop tomatoes, wash and drain soybean sprouts for later use;

In a pot of cold water, add the trotters and some ginger slices;

After the fire is boiled, remove the trotters;

Wash the pig's trotter with warm water and control the moisture;

Pour the dried trotters and the remaining ginger slices into the pressure cooker;

Put the soaked kidney beans into the pressure cooker and add enough water;

Cover the lid and cook on high heat;

After the pressure cooker is aired, turn to low heat and cook for 12 minutes;

After turning off the fire, let it cool naturally, and open the lid after the pressure cooker is out of air

Take another pot big enough, add a little oil, and saute the ginger and garlic;

After sauteing the ginger and garlic, pour the red sour into the pot;

After properly sautéing the red sour, pour the tomatoes into the pot;

Stir-fry evenly, pour the trotters and enough soup into the sour soup pot;

After the big fire is boiled, turn to low fire;

Cover and cook for about 10 minutes until tasty;

After cooking, open the lid and put the bean sprouts in the pot;

After the bean sprouts are cooked, add salt and wood ginger oil.
Tips:
1. It is best to burn the pig's feet. If you buy it at the market, please ask the stall owner to use the spray gun to help it. If you buy it at the supermarket, you can only cook it yourself. If you can't burn it, cook it for more time when cooking in step 4;
2. It tastes better with fresh wood ginger, if not, only wood ginger oil can be used instead;
3. There are fresh bamboo shoots, boiled with bean sprouts, the soup tastes better;
4. After making the sour soup hoof flowers, you can eat it directly or make a hot pot base. Shabu tofu, vegetables, pork ribs, and crispy meat are all delicious;
5. To eat with dipping in water, dipping in water with chili powder, fermented bean curd, green onion, light soy sauce, etc. adjust according to your own preferences.
