Ham and Scallion Roll

Prepare the main ingredients and dissolve the yeast with warm water. The amount of water used to dissolve the yeast should be subtracted from the amount of water used for kneading.

Pour the yeast water into the flour and mix well. Add sugar and water in portions to knead the flour into a smooth dough.

Cut the ham into small pieces, chop the chives, add a little baking soda and mix well.

The dough does not need to be proofed, just roll it out into a rectangular dough sheet. Grease and sprinkle a little salt.

Sprinkle with ham and chopped green onion, roll up from top to bottom.

Cut the dough into small pieces and press in the middle with chopsticks.

Stretch it slightly, wrap it around your index finger, and pinch it tightly underneath.

Proof in a steamer for about 20 minutes. It can be steamed in the pot. The Hanamaki I made are very small, and the heat can be turned off by steaming for 10 minutes after the water is boiled.
