Handmade Donkey-hide Gelatin Cake
1.
Material preparation: Ejiao cake is cut into pellets (freshly boiled by yourself, softer), red dates are sliced and cored with a knife, rock sugar is crushed as much as possible to facilitate dissolution, and walnuts are broken into two halves.
2.
Stir-fry the walnuts over a low heat (it is cooked if they are crisper), and be careful not to fry them dark.
3.
Stir-fry black sesame seeds in a low heat (when you hear intermittent crackling, it is cooked when you taste the sesame fragrance)
4.
Pour the rice wine and rock sugar into the pot on medium heat, stir with a spatula until the rock sugar dissolves. (Smashed into small pieces are easier to dissolve)
5.
Pour the chopped donkey-hide gelatin cake over medium heat and stir until it dissolves. After a few minutes, the donkey-hide gelatin cake liquid flows down the spatula vertically and the edge of the spatula becomes a triangle before proceeding to the next step. (This is the key point, this time there is no triangle-shaped picture)
6.
Put the goji berries and raisins on a low heat, mix well for 30 seconds, and proceed to the next step. (Goji berries and raisins are dried, heat it slightly for a while to soften)
7.
Put the walnuts in a low heat, stir well and proceed to the next step.
8.
Put red dates in low heat, stir well and proceed to the next step.
9.
Finally, put the sesame seeds in a low heat, stir well and turn off the heat. (It is more laborious to stir after putting sesame seeds, try to stir evenly)
10.
Spread a layer of plastic wrap inside the container and brush some cooking oil on the plastic wrap (to prevent sticking). Put the evenly stirred donkey-hide gelatin cake in a container, pat it to form and seal it in the refrigerator for 12 hours. Then take it out and cut it into cubes, and you're done.
Tips:
1. If donkey-hide gelatin is bought in a pharmacy, try to powder it.
2. If you can't eat sweet, you can put less or no rock sugar.
3. The sesame must be fried first, otherwise it will be as flavorless as eating sand.
4. The sesame must be put last.
5. Be sure to put oiled plastic wrap in the container first, and don't stick it out when the time comes.
