Hazelnut Chocolate Meal Pack

500g wheat flour➕10g refined salt➕35g white sugar➕25g milk powder, mix well.

7g yeast powder➕100g purified water, stir to fully dissolve it.

Pour the yeast liquid into the wheat flour and stir to make it fully absorbed.

Pour 250g of net water into the wheat flour several times.

Heat the butter in the microwave for 30 seconds to soften it, then add it to the dough and knead it into a smoother dough.

The hazelnut kernels are crushed in advance.

Add hazelnut kernels and chocolate beans to the dough that has not been completely formed, and knead it into a smooth dough.

Spread a slightly damp cloth on the dough and proceed with basic fermentation: 1 hour and 30 minutes.

After the first fermentation is over, divide the dough into 12 small doughs. After shaping, spread them with a slightly damp cloth and let them sit for 15 minutes.

After standing, brush with egg liquid (beaten the eggs into egg liquid in advance), and put it in the refrigerator for 10 minutes.

After the refrigeration is over, brush the egg liquid again, spread with a slightly damp cloth, and carry out the second fermentation: 1 hour and 15 minutes.

After the second fermentation is over, make a sausage incision (parallel oblique cut) with a razor blade, and then brush the egg liquid again.

Preheat the oven in advance: 200 degrees, 10 minutes.

After the preheating is over, pour 50g of water into the empty baking pan at the bottom of the oven, put it into the baking pan with the dough, and start baking: 200 degrees, upper and lower fire, 15 minutes.

After the bread comes out of the oven, take it out and let it cool naturally.
