Head Bean Soup
1.
Remove the teeth from the fish head. (Fish teeth and line are the fishy parts of the fish)
2.
Tofu cut into cubes or slices (I used a mold to cut into a flower shape to increase my daughter’s appetite)
3.
Cut green onion into sections and slice ginger
4.
Heat the wok, add a little base oil, heat the pan with cool oil, add the fish head and fish tail and fry until both sides turn yellow
5.
Push to the side, add green onion and ginger and stir fry for a nice flavor.
6.
Add hot water, add enough at a time, and bring to a boil.
7.
Cover with a lid, and simmer on high or medium heat until the fish soup turns white.
8.
Add the soft tofu and simmer for another 5 minutes.
9.
Just add salt and chicken essence before serving.
