After adding cold water and forming a harder dough shape, pat the surface flat, cover tightly, and hair for more than 12 hours. I usually put the noodles in a warm place in the evening to make hair.

After a night of hair, the dough grows tall and there are cracks on the surface. A deeper crack will appear if you press it lightly with your fingers.

I use the red kidney bean paste which is more authentic, cooked in advance and crushed into a mud-like ball for use. The bean paste is the size of a ping-pong ball.

There is no need to mix the noodles anymore, and the dough that has been made is directly pulled off a piece of reunion, which is a circle larger than the prepared bean paste.

Tips:
The yellow rice noodles should not be soft and soft. I weighed it. I used about 800 grams of flour. I used 380 grams of boiling water and 300 grams of cold water. The dry humidity of the yellow rice flour I used should be properly adjusted. A pinch will spread it, but it will form a ball if you hold it with your hands, so that's it.
For the bean paste, you can use red kidney beans, red beans, or buy ready-made bean paste.
