Tips:
The noodles in the north are very thin, suitable for steamed noodles. Southern noodles are suitable for fried noodles, hard and thick. So when buying noodles in the south, choose soft cuts, and some noodles are quite soft. Also, when steaming wet noodles, pour oil and stir and then steam, the noodles will be soft and loose.
