Hericium and Chicken Soup

I use the Hericium erinaceus without washing and foaming, which is very convenient to eat; wash the ginger and slice it

Cut the chicken into pieces, wash it, and prepare to blanch it in a pot under cold water. Note that you must cook under cold water, otherwise the blood in the meat will not be boiled out, it will be fishy, and it will not play the role of blanching.

After boiling, skim off the foam, remove the chicken, and rinse with hot water

Put the rinsed chicken into the ceramic pot

Add hericium and ginger slices

Add enough boiled water, and add enough water all at once. If you add water halfway, be sure to heat the water

Cover the lid and cook on a low heat for about 2 and a half hours. If there is any scum during the process, use a spoon to remove it, and try to open the lid as little as possible. Just add in the right amount of salt in the last ten minutes. If you cook too much and you can't finish the meal, it is recommended to add salt to your own bowl when you drink
