Hericium and Sandworm Pork Bone Soup
1.
Wash the surface of the Hericium erinaceus, cut off the roots, tear it into small pieces, soak it in warm water for 3 hours, remove it, squeeze the Hericium erinaceus by hand, repeat it several times, then soak it in water for 15 minutes, squeeze Yellow water, repeat this several times.
2.
The sandworms remove the internal organs attached to the surface and wash them. Put them in a pot and add 150ml of water. After boiling, boil them on a low heat for 15 minutes. Take them out and rub the attached sand with your hands again, decanting the water for use. If there is a lot of sand, there will be a lot of sand left in the bottom of the pot to be discarded. Fry the sandworms into 2~3 sections, cut or cut into thin strips for later use
3.
Put the pork bones in cold water and boil them until the pork bones are slightly discolored, then remove them from the cutting board and use a knife to cut off the excess fat. Put it in a pot of cold water again, boil on high heat until the water boils, pour out the water, and wash away the foam on the pork bones
4.
After the high fire is boiled, cook on a small fire for 1.5~2 hours, turn off the fire, skim the foam and grease

Tips:
Hericium must make enough effort, not to save time and sloppy, otherwise the soup will have a bitter taste.
