Hericium Biscuits (with Hericium Powder)

First make the Hericium erinaceus powder~~ I soaked 2 dried hericium edodes in water for a day and night, changing the water halfway and removing the yellow water.

Squeeze the Hericium edodes with water, tear off the small ones, and put them in a baking dish lined with tin foil.

Put it in the oven at 155 degrees, full fire, middle level, and bake for 40 minutes. (I tore down the Hericium erinaceus again in the middle)

Put the roasted Hericium erinaceus into a blender and smash.

I weighed it, 18 grams. Don’t waste the Hericium erinaceus powder left in the blender. Pour some boiling water to nourish the stomach.

How to make Hericium biscuits: Weigh 120 grams of butter, add 70 grams of marshmallow, and put them into a large bowl without water.

Heat through the hot water seat to soften the butter.

Use a whisk at low speed to beat the butter until the color becomes lighter.

Add the egg liquid slowly to the butter in portions and beat at low speed.

Beat until the egg and butter are fully integrated.

Add 200 grams of low-gluten flour that has been sifted twice and 18 grams of Hericium erinaceus powder.

Knead into dough.

The dough is a bit sticky, it doesn't matter, it will get drier; put an appropriate amount of dough in a fresh-keeping bag, and press it with a mold.

Tear off the fresh-keeping bag, take out the pressed shape, and put it on a baking tray lined with tin foil.

The remaining dough can be directly rolled out on the chopping board and pressed into shape.

I bake three pans, full fire, put the middle layer, 160 degrees, bake the thinner biscuits for 10 minutes, and the thicker ones for 15 minutes. Always watch the oven, don’t over-bake.

Taste it, it's very crispy and delicious~ After cooling, keep it sealed in a box.
