Home-cooked Elbow

Pull out the pork knuckles and clean the hair on the shredded pork.

Put an appropriate amount of water in a separate pot, add elbows, green onions, sliced ginger, pepper, star anise, cinnamon, garlic cloves, rock sugar, and bay leaves. Bring to a boil, pour in cooking wine, and simmer for three hours

Add appropriate amount of salt and simmer for half an hour, while preparing the gorgon sauce, add a little oil to the pot, fry the chopped green onion, add light soy sauce, add the star anise to the broth and simmer for 40 minutes, turn off the heat when there is a bowl of soup left

Pour the soup on the elbows. The delicious homemade elbows are delicious in color and flavor, with rotten flesh and bones, suitable for all ages.
Tips:
1. The elbow can be roasted on the fire to remove the untreated hair. 2. Boil the bleeding with cold water in the pot. 3. It can be deboned or not shaved according to personal preference. 4. When simmering, simmer on a low heat, and cook until easily penetrated with chopsticks. 5. The last gorgon juice should be salted appropriately, because it has been left before, so you don't need to leave it.
