Home Roasted Vermicelli Small Yellow Croaker

1. Remove the scales, head and internal organs of the small yellow croaker, wash and dry, slice the bacon, and soak the vermicelli in water for half an hour.

1 Cut the fish into 2 sections and put it on a large plate, sprinkle the starch on it and mix well by hand.

Heat the oil in a frying pan, add yellow croaker and fry until golden brown on both sides, set aside, add ginger and garlic until fragrant, add bacon and stir-fry until the meat slices change color.

Pour in Huadiao wine, vinegar, oil, sugar, cover and simmer for half a minute. Pour in 250ml of boiling water, cover and simmer for 3 minutes. Add vermicelli and cook for half a minute.

Add chopped green onion, salt, pepper, and chicken essence to taste.

Plate.
Tips:
Bacon can be replaced with pork belly.
