Home Roasted Vermicelli Small Yellow Croaker

Remove the scales, head and internal organs of the small yellow croaker, wash and wipe dry, slice the bacon and soak the vermicelli in water for half an hour.

Cut the fish into 2 sections and place it on a large plate. Sprinkle the starch and mix well by hand.

Heat the oil in a frying pan, add yellow croaker and fry until golden brown on both sides, set aside, add ginger and garlic until fragrant, add bacon and stir-fry until the meat slices change color.

Pour in Huadiao wine, vinegar, sugar and oyster sauce, cover and simmer for half a minute, then pour in 250ml of boiling water, cover and simmer for 3 minutes.

Boil the vermicelli for half a minute, add chopped green onion, salt, pepper, and chicken essence to taste.
