Home-style Fried Beef Tendon
1.
Cut the cooked beef tendon into appropriate size pieces. The ones sold in the market are generally cooked. If you buy raw, it will take more effort to cook it yourself.
2.
Wash celery and green garlic and cut into sections. Finely chop dried chili. Cut a few slices of ginger.
3.
Pour a small amount of oil into the pot, stir the green garlic and celery in the pot first, add a little salt, and cut it off.
4.
Put the fried green garlic celery on a plate and set aside.
5.
Pour more oil into the pot, pour the ginger slices and sauté.
6.
Pour the beef tendon and stir fry a few times.
7.
Add a bowl of water, appropriate amount of salt, cooking wine and light soy sauce, cover and simmer for a minute or two. Because the beef tendon is cooked, it does not need to be cooked for long. The main reason to cook it is to taste it.
8.
Pour in the green garlic and celery that have been fried before, stir fry and mix well.
9.
Serve on the table. A little salty, a little spicy, soft and glutinous, delicious.
Tips:
1. Stir-fry the green garlic and celery first, so that the green garlic and celery will keep the crispy taste, will not be smashed with the vegetables, and it will be better to serve. If you find it troublesome, it doesn't matter if you fry it together later.
2. The beef tendon is already cooked, it doesn’t take too long to simmer it later, just to make it more flavorful.
