Homemade Chicken Feet

Chop chicken feet and finger open both sides

Wash with salt and water repeatedly

Boil water in a pot and add chicken feet to simmer for a few minutes, skim off the foam, pour out and rinse with cold water a few times; add water to the pot and bring to a boil, pour the chicken feet and cook for a while until cooked

Take out the cooked chicken feet into a clean container (I like to use cold water after taking it out again)

Soak the cooked chicken feet in cold boiling water (I added a few ice cubes to speed up the cooling rate)

Put the soaked chicken feet into the quick-freezing layer of the refrigerator, and it will take about an hour and a half or longer (so that the chicken feet have a little hardness when you touch them)

Take out the soaked chicken feet, pour out the soaking water, add fish sauce, white sand sugar, white vinegar, wild pepper, sesame oil, garlic, etc. according to personal taste. Sprinkle some white sesame seeds (if you don't like it, don't use it) and stir, put it in the refrigerator, take it out from time to time and stir evenly to make it evenly tasty.
Tips:
Reminder: The soaking time should be long enough; after seasoning, it must be stirred evenly from time to time to make it easier to taste; it is recommended to eat at least one night before the taste is better
