Homemade Chili Oil

Prepare the materials in advance.

Pour an appropriate amount of peanut oil into the pot. After the oil is hot, add sliced ginger, garlic slices, coriander, star anise, and bay leaves.

When the fragrant flavor is obtained and the surface of the ginger and garlic slices becomes golden, use a colander to remove the ginger slices, garlic slices, coriander, bay leaves and star anise.

Turn to low heat, put in appropriate amount of peppercorns, fry on low heat, fry out the aroma and then remove the peppercorns with a colander again. Turn to high heat, heat the oil until it starts to smoke, turn off the heat and let cool for 1 minute.

Put the sesame and chili together and stir well, then pour the hot oil, and quickly stir evenly with chopsticks.

The fragrant chili oil is ready.
