Homemade Cold Tofu

Rinse the tofu with water and cut into small pieces

Add salt to the water, boil the tofu cubes, and drain the water

While boiling the water, cut the shallots, onions and fungus, and mix well. The raw diced onion is very refreshing and I personally love it. If it is too spicy, you can leave it alone.

Pour in tofu cubes, add chicken powder and sesame oil and mix well. I didn’t use salt, the chicken powder particles are smaller, it is easier to melt evenly, can improve the freshness without over-stirring, so as not to break the tofu.

Serve and sprinkle a little black sesame seeds. The freshness is enough, so I don’t use light soy sauce, so I can’t mix the soup and the umami won’t slip away.
