Homemade Double Skin Milk
1.
Pour 1 small packet of whole milk powder in half a bowl of warm water.
2.
Put the brewed milk in a steamer, take it out and let it cool after steaming, forming a slightly wrinkled milk skin on the surface. (Some people boil it directly and pour it into a bowl, but it is more difficult to form a skin.)
3.
With a small fork along the edge of the bowl, pick up a short section of the formed milk skin and pour out 2/3 of the milk. Be sure to leave some and not pour out, otherwise the milk skin will stick to the bottom of the bowl and the double skin effect will not be achieved.
4.
After whipping the poured milk, egg white and sugar together, pour it back from the gap of the milk skin along the wall of the bowl. This way the milk skin floats up again.
5.
Put it in a steamer and steam for 10 minutes on medium-low heat.
