Homemade Ejiao Cake

The bought donkey-hide gelatin is powdered in the pharmacy (or broken by yourself, the more broken the better), and put it into a larger stainless steel basin, pour the rice wine, seal it with plastic wrap, and soak it thoroughly for at least 12 hours (I used it the day before Yes, I forgot to take the picture.) Black sesame seeds are more divided into 2 or 3 times. Fry them over medium and low heat and set aside (don't fry them).

The rock candy is crushed, the more it is broken, the easier it is to dissolve.

Wash and drain the red dates, remove the pits and cut into small pieces, peel the walnuts and break them into small pieces.

Take a large pot and add half of the water. (If there is too much water, the water will splash out after it is boiled. The amount of water will be reduced during the cooking process. You can add more water). Turn on a medium-to-small fire and put the soaked Ejiao in the pot. Put it in the pot and stir while heating.

The straight Ejiao melts completely without particles. This step was only 7 or 8 minutes, and I spent a few more minutes after it melted down, which was about 15 minutes.

Add rock sugar and stir until the rock sugar is completely melted. (My rock candy is not very broken, it took a little longer, it looks like 15 minutes)

Add the red dates and heat and stir for about 5 minutes.

Add the walnut kernels and continue to heat and stir. During this time, take a walnut kernel to taste that it has no raw flavor. It will take about 10 minutes.

Add the black sesame seeds and continue to heat and stir. At this time, the donkey-hide gelatin is very viscous and it is very difficult to stir.

Turn off the heat after mixing well.

Wash the fresh-keeping box in advance to control the moisture and apply a layer of corn oil (or salad oil), pour it in while it is hot, compact it, and cool it sufficiently, seal it and refrigerate until it hardens.

Take out the slices, seal them again and store them in a refrigerator. Just take one or two slices every day or every other day.

Tips:
1 It is best to use plastic or relatively softer containers for cooling Ejiao, so that it is much easier to take out hardened Ejiao. If it is a glass container or other hard container, it will be very difficult to take out.
2 The boiling process is relatively long, the water in the pot will be reduced, remember to add some water.
3 The rock candy is a little too much and slightly sweeter, so you can reduce it more.
