Homemade Fermented Rice

Weigh the glutinous rice and wash it well

Add the same amount of water as glutinous rice (electric pressure cooker cooking rice: water=1:1)

Cook glutinous rice (you can also soak glutinous rice and steam it)

Beat the cooked glutinous rice and put it to luke warm

After boiling the container with boiling water, pour the glutinous rice, add 100g of cold water, and stir evenly

Distilled koji with a small amount of cold water

Pour into the glutinous rice, stir evenly, put on disposable gloves to compact the glutinous rice, leaving a hole in the middle
8.
Cover the lid and put it in the yogurt machine to ferment for 30 hours.
Tips:
All tools need to be washed and dried, and should not be touched with raw water and oil, otherwise they will grow mouldy and grow hairs.
There will be water in the hole in the middle of the finished fermented rice, and it will smell the aroma of wine. Keep it in the refrigerator.
