Homemade Ginger Candy

Ingredients: ginger, white sugar

Cut the ginger into slices about 3 mm thick

Soak the sliced ginger in clean water for several hours, changing the water several times during the period. (I made it the next morning after soaking in the evening)

Put the soaked ginger slices into a boiling pot, add sugar, add half a cup of water

After boiling on high heat, change to low heat to boil out the added water and the water in the ginger

When the syrup can be boiled in the pot, turn off the heat quickly (the whole cooking process is about 30 minutes)

After boiling, pour the ginger and syrup into a stainless steel basin or a non-stick pan, and stir-fry quickly with chopsticks. (Note this is not on fire)

Stir-fry until the syrup is sandy, stick to the ginger slices and become a dry sugar sand state, you can stop the stir-frying, and then let it cool naturally.

See if the fried ginger candies are the same as those on the market. Keep in an airtight jar after natural cooling
Tips:
The sugar should not be too little, and the ratio of 8 taels of sugar per pound of ginger is more appropriate.
If you don't like the spicy taste of ginger slices, change the water several times during soaking, and extend the soaking time to reduce the spicy taste of ginger.
