It’s the season when a large number of Aberdeen ginger is on the market. Every time I arrive, I will buy a lot of them. Some are used for stir-frying, and some are used as chopped peppers or pickled for eating. Aberdeen ginger is a seasonal dish. After this season It’s hard to buy, so it takes longer to make it into kimchi. It will be good to eat directly or stir-fry. I like the taste of Aberdeen ginger but not spicy, and It is tenderer and crisper than the hometown, and is especially suitable for stir-frying or eating. Today, let’s stir fry with lean meat and dried tofu. On weekdays in our hometown, banquets like to use local Patong dried tofu and lean meat. This time I specially added ginger, which tastes better.

Fried Pork with Ginger and Dried Tofu

1. All the raw materials are cut and set aside, light soy sauce and oyster sauce are added to make the sauce

2. Stir fragrant ginger garlic shallot in hot oil

3. Stir fry with lean pork

4. Stir-fry until it changes color

5. In another pot, chop the peppers in hot oil and stir fry until fragrant

6. Add ginger

7. Add green pepper

8. Add tofu

9. Add the fried lean pork

10. Pour in the adjusted juice and mix well

Tips:

1. I usually don’t like thickening when I cook. If I like the finished product, I can thicken moderately.
2. It is more convenient to prepare a bowl of sauce in advance to fry the vegetables and will not let the vegetables over-cooked
