Homemade Ice Cream

The egg yolk and egg white are separated. Add 30g of milk to the egg yolks and beat them, put them in a small milk pot and heat them until the surface is slightly bubbling, then take them down and let them cool (remember to heat them on a low fire and keep stirring them to avoid clumping and affecting the taste).

After whipping the whipped cream to 90% (does not need to be completely whipped), add the cold egg yolk milk liquid and mix well.

Add white granulated sugar to egg whites in 3 times and beat them into hard bubbles (as shown in the picture).

Add the whipped egg whites to the whipped cream and mix well.

Finally, add all kinds of dried fruits or nuts, stir well and freeze overnight in the refrigerator, and it's done.
Tips:
Don't overcook the egg yolk and milk when they are heated together, as the clumping taste will not be good.
