Homemade "rice Cake" A Must

2 eggs (128g in shell), 80g milk, 20g salad oil, 90g rice noodles, 50g powdered sugar, appropriate amount of green and red silk, 3g white vinegar

The egg yolk and egg white are completely separated in two stainless steel basins without water and oil.

Beat the egg yolks until they are whitish, add 10g of powdered sugar and stir evenly.

Add 20g of salad oil and mix well.

Sift the rice noodles into the egg yolk paste, and use the method of turning or cutting to make them uniform and non-granular (standby).

After the egg white is beaten coarsely, add 20g of powdered sugar and beat with a whisk until finely soaked.

Add 20g of powdered sugar for the second time, add 3g of white vinegar, and continue to beat the egg white that has been soaked.

Beat until small hooks appear in the egg beater and the egg whites in the basin.

Scoop 1/3 of the egg white paste into the egg yolk paste and mix (not strong) evenly

Pour the evenly mixed rice cake batter into a container that has been greased in advance (a thinly spread of salad oil), and shake the bowl a few times to produce foam.

Sprinkle in the chopped green and red silk (if there is no green and red silk, you can replace it with raisins, wolfberry or hawthorn cake, as you like) and evenly sprinkle on the rice cake batter.
