Homemade Salted Tofu Flower

Soak the soybeans one day in advance. Pour the 250 grams of soaked soybeans into the food processor

Add 1400ML water, start the machine to make raw soy milk, you can make a few more times

The beaten raw pulp is slowly poured into a cotton yarn bag to filter, and finally squeezed dry by hand. Okara can be used as a cake

Pour the soy milk into the pot and heat it to a boil. Turn to low heat and cook for 12 minutes. Put 4.2 grams of lactone in the pot

Add 10 grams of boiled water to dissolve the lactone, pour the boiled soy milk into a basin with lactones, if the room temperature is lower, put the basin in warm water

After pouring, don’t stir it, just close the lid and let it stand for 20 minutes. When the time is up, open the lid and the tofu is finished.

When standing still, we can chop up the mustard tuber, roast the shrimp skin, etc., use a spoon to scoop an appropriate amount of tofu into a bowl

Add chopped mustard greens, dried shrimp skin, seaweed, add a spoonful of light soy sauce and a spoonful of spicy oil.
Tips:
When you pour the soy milk into the basin containing the melted lactone, lift it up a little and pour it down! Don't disturb after pouring!
