Homemade Small Fried Mussels
1.
Wash the mussels, put them in a steamer, heat in cold water for about ten minutes
2.
While steaming the mussels, prepare other ingredients
3.
When the mussels are steamed to the point where they are mature, the shell is opened seven or eight minutes, not fully opened. The meat is very tender at this time
4.
Remove the shell and take the meat, some mussels have silk in the middle, maybe removed
5.
Heat oil in a pan, sauté the minced garlic, sauté the onion slightly to soften
6.
Pour in carrot slices and green peppers, and stir-fry until they are broken
7.
Add fungus, salt and a little light soy sauce and stir well. Mussels have a salty taste, so the salt and light soy sauce are added to enhance the flavor of the vegetables.
8.
Pour into the mussels, stir fry a few times
Tips:
1. Don't over-steam the mussels. They are just half cooked, because they need to be fried to keep the meat fresh and tender.
2. Mussels are not fishy, no need to add ingredients such as cooking wine to remove fishy. The steamed mussels can be eaten directly and they are delicious.
3. When frying onions, add a little more oil
