Homemade Spicy Cabbage

After washing the cabbage, tear it into large pieces (half a slap). While tearing, sprinkle salt on the cabbage. I don't have a big jar at home, so I pickled it like this.

After tearing, mix the cabbage well, and then compact it. Because I don't add too much salt, it usually takes 24 hours. (This is not a whole cabbage, it is not easy to clean with too much salt.)

After the cabbage is marinated for 24 hours, there will be a lot of water, and the cabbage sticks will be soft and break.

Add water to the glutinous rice noodles and boil it over a small fire until it becomes a spoon.

Finely chop ginger and mash garlic.

Carrots, apples, pears, shredded shreds, chopped leek, minced ginger, garlic, put in glutinous rice paste, add salt, sugar, shrimp paste.

The shrimp paste is not enough, so make the codfish caviar paste.

Add chili noodles and mix well.

Squeeze the cabbage with water, and rinse the container of spicy cabbage with the cabbage water.

Put the cabbage in the hot sauce paste and mix well.

Put the well-mixed spicy cabbage into an airtight container, and you can eat it in 7 days.
Tips:
When preparing hot sauce, be sure to taste and add. Too salty and too spicy is not tasty, but it is easy to be sour when it is weak.
