I want to make tofu brain and worry about unsuccessful because when I bought lactones on Taobao, I saw netizens who said that they were successful or that they failed several times. I accidentally saw a self-made tofu brain post, saying that as long as you remember three numbers, you will succeed. The three numbers are: the dosages of dried soybeans, water, and lactones are 100g, 900g, and 3g respectively. After three times of practice, it was successful, but the amount of water was slightly changed. I used 900ml of water, which is a little less than 900g of water. The lactone is exactly 3 grams per pack, which is very convenient to use.

Homemade Tofu Brain

1. 100g dried soybeans rinsed and soaked overnight

2. Add 900ml of soaked soybeans to the soymilk machine to make the soy juice, filter out the soy dregs, and then cook the soy juice.

3. Boil the soy milk and cool to 90 degrees

4. Prepare a package of lactone, (one package is exactly 3g) melt it with warm water

5. Pour the soy juice into it, cover and simmer for about 15 minutes

6. After 15 minutes, the soy juice becomes a delicate and smooth tofu brain

7. Scoop out a few spoons and put in a bowl

8. Put coriander and dried shrimp

9. Pour light soy sauce, sesame oil, vinegar, homemade chicken powder, delicious tofu brain is ready to eat
