Honey Bean Double Skin Milk

Pour the milk into a basin and heat it, don't boil it.

Pour the heated milk into a bowl, then let it warm and let it stand until a layer of milk skin forms on the surface.

Use chopsticks to make a small mouth on the side of the milk skin, and slowly pour the milk in the small bowl back into the basin along the mouth, leaving the milk skin formed on the surface in the small bowl.

Separate the 3 egg whites from the egg yolk and take the egg whites for later use.

Add caster sugar and vanilla extract to the milk.

Stir the egg whites, pass through a sieve and pour into the milk to filter out the bubbles.

Stir the milk and egg whites well.

Tips:
Double skin milk is steamed on medium heat, don't make high heat, otherwise it will be easy to steam out honeycomb
