Dough at low speed and then to medium high speed. Add salt and yeast when the dough is 3 minutes.

First whipping at low speed for 2 minutes, then turn to medium speed and high speed whipping, which can hold out a thick film;

First, completely beat the butter into the dough at low speed. Turn to medium speed and beat for 2 minutes, then turn to high speed. The dough is soft, smooth and shiny, and does not stick to the wall of the basin. Pull a piece of dough, which can hold out a transparent and elastic film;

Roll the dough into a long piece, spread honey red beans, fold and sprinkle honey beans, repeat 3 times, round the dough, without honey beans exposed on the surface, put it in a basin, covered with plastic wrap, and ferment in a warm and humid place; such as in a fermentation tank The temperature can be set to 28 and the humidity is 75; if the oven is used, the fermentation process can be used, and the humidity can be increased by spraying water;

When the dough is twice the original size, dip your fingers in the flour and poke a hole on the top of the dough without collapsing, but slightly shrinking;

Pour the dough on the chopping board, tap it gently to exhaust, weigh it and divide it into 2 equal parts, without slack, just roll it into a beef tongue shape;

Roll it into a roll from top to bottom, put it in a toast box with the seal facing down, and put the other half of the dough in a 250g toast box after the same operation; the secondary fermentation temperature is 38 degrees, and the humidity is 85;

When the dough is 9 minutes full, the surface can be cut twice, brushed with egg liquid, and sprinkled with crispy grains; other decorations can also be made, such as brushing with egg liquid, sprinkle with almond slices or black and white sesame seeds; the oven starts to preheat and fire. 180/190 degrees;

Put the toast into the middle layer of the preheated oven, and fire up and down at 180/190 degrees for 28 minutes;

Tips:
1. The amount of honey red beans can be more or less; use the folding method to wrap the honey red beans into the dough, but the gluten is not damaged, and the honey beans are evenly distributed; because they were made in one go during the live broadcast, I forgot to take pictures. Make up the process with words and brains;
2. The mold is two 250g water cube toast molds. If you want to make one 450g, the amount of powder can be reduced to 250g, and other materials will be reduced accordingly;
3. The baking temperature and time are adjusted according to the actual situation of the oven used, the material and size of the mold.
