Honey Melaleuca

Prepare 2 eggs, separate the egg white and the yolk, and put the egg white in an anhydrous and oil-free container.

Whip the egg whites, add sugar in batches, beat to nine to distribute, lift up the egg beater, and the egg whites will have a small tick.

Add 20 grams of honey to the egg yolk. My honey is a bit thick, so I added about 30 grams of milk and beat it with a whisk.

Add the egg yolk paste to the egg whites, and stir slowly, so that you don't have any circles and tendons. Find a small flat pan, I used a pizza pan, brush with a thin layer of oil to release the mold, scoop about 3 scoops of the batter and smooth it with a spatula.

Put it in the upper part of the oven and bake for three or four minutes. Just look at the color on the surface. Remember to just turn on the heat. Take it out and continue to put the batter, and continue to bake it until the batter is finished, I only bake three layers.

After baking and demoulding, you can see the layer after layer of cake by cutting it with a knife. I cut into four pieces, brushed some honey in the middle, and overlapped into one piece. This is not a big amount, so I can only make one piece.
