Horseshoe Red Date and White Fungus Soup

Put fresh white fungus in a basin and add water. I use fresh white fungus without soaking the hair, it is easier to boil out the glue, and the taste is softer. Dry white fungus needs to be soaked 1-2 hours in advance.

Clean it by hand. The white fungus is torn into small flowers. Don't use a knife to cut, it is easier to cook with a soft and waxy texture by tearing it by hand.

After cleaning the jujube, remove the jujube nucleus and continue to cut into small dices.

Add appropriate amount of water to the pot, put small pieces of white fungus into the pot, and add the chopped horseshoe diced.

After the high heat is boiled, turn to a low heat and simmer. Remember to stir a little with a spoon to avoid overflowing the pot and muddy bottom! Cook until the soup is thick, add jujube, and stir well. Be sure to light the fire throughout. This way, the cooked white fungus soup will be sweet, soft, and thick and gelatinous.

Simmer on low heat for about 20-25 minutes, make the soup thick, and boil the white fungus until it melts out of glue. Add rock sugar and stir until melted.
