The hot and sour noodles originate from the folks in the Southwest. The ingredients are made from the local hand-made sweet potato noodles. The taste is named after the hot and sour flavor. Today, I made a bowl of hot and sour noodles at home. It was really enjoyable, and it was healthier and tasted more to my taste.

Hot and Sour Noodles

1. Prepare ingredients.

2. Soak sweet potato flour in warm water until soft.

3. Pour edible oil into the pot, add peanuts, fry on low heat until the peanuts are slightly cracked, then turn off the heat and use the remaining temperature of the oil to fry the peanuts.

4. Remove the fried peanuts and let cool.

5. Take a bowl, add chicken essence, light soy sauce, salt, and vinegar to make a sauce.
Add red oil according to your preference.

6. Boil water in a pot, add soft sweet potato flour when the water is boiled, and cook for about 3 minutes.

7. Blanch the small rapeseed before serving.

8. Put the boiled sweet potato flour into a bowl, add deep-fried peanuts, small rapeseed, chopped green onion, sprinkle a spoonful of sesame seeds, top with the adjusted juice, and then pour the soup of boiled sweet potato flour.
