Hot Noodles with Sesame Paste

Machine-rolled wet noodles 1 kg.

Prepare coriander, dried Xiaoshan radish, sesame paste, sesame oil, cold soy sauce, etc.

Clean the coriander and radish and chop them for later use.

To make hot dry noodles, the noodles need to be prepared in advance. Bring the water to the boil, add the noodles, and scald them immediately.

Drain the water.

Pour into the prepared dinner plate, brush with oil, and shake the noodles quickly to avoid sticking. Let the cooked noodles cool, cover and store for later use.

When eating hot dry noodles, take the noodles that have been cooked and scald them in boiling water, about 1 minute.

Pick up the noodles, drain the water, and pour into a bowl; add the sesame paste.

Pour in the cold soy sauce.

Add sesame oil.

Pour the dried radish.

Sprinkle with chopped coriander.

I specially add chopped pepper to one of my bowls. Mix well while it's hot and enjoy.
Tips:
1. Put the cooked noodles in a fresh-keeping bag, and store them in the refrigerator for a few days, and take them as you eat.
2. Boil the noodles in boiling water. The water will make small bubbles to pick up again. Do not cook for a long time to avoid the noodles being soft and chewy.
3. The noodles with seasoning need to be mixed quickly, and it is not easy to mix evenly after the sesame paste is dry and cold.
4. The ingredients of the noodles can be as personal as you like, and the sesame sauce is indispensable.
5. Tahini must be boiled with cooked oil, not with water, otherwise it will lose the unique flavor of hot-dried noodles.
