How to Make Puffs (making Puffs in The Oven)

Prepare the required materials

To make the custard sauce filling: first beat the egg yolk with sugar

Add milk in portions and mix well

Then sift in the flour and mix well

After heating the batter, keep stirring until it is thick and then remove the water, let it cool

Make the puff cake body: cut the butter into small pieces, add water, and bring to a boil over medium heat

Remove from heat, add flour and mix well to form a paste

Let the batter cool to 60 degrees, add the whole egg liquid in three times

Put it into a piping bag and squeeze onto the baking tray

Preheat the oven at 200°C for 3 minutes, bake for 20 minutes, turn 180 degrees, and bake for 5 minutes until golden brown.

Let the puffs cool and squeeze into the custard sauce filling
Tips:
1. The temperature of baking puffs should be appropriate, too high will ripen early, too low will not be conducive to expansion.
2. Do not open the oven lid when baking, otherwise it will affect the expansion of the puff.
3. I use a PE5386 one-degree shuttle oven. When you use other brands of ovens, please pay attention to the appropriate temperature adjustment.
