Hu's Braised Pork Rice Ball

Boil the eggs in cold water for 15 minutes, turn off the heat, soak them in cold water, and peel them.

Cut the pork belly into small cubes, add cold water to the pot, and skim it to float after boiling. Remove and control the moisture.

Cut shiitake mushrooms into dices as shown in the picture.

Shred the onion.

Stir the onion to dryness.

Cut garlic in half and scallion into sections.

Add cold oil and rock sugar to the pot, fry until the rock sugar melts, and add the diced meat.

Stir-fry the diced meat until the color changes, add the diced mushrooms, the fried onion, and stir-fry evenly add the onion and garlic. Then add an appropriate amount of soy sauce, stir fry evenly, add hot water to marinate all the ingredients. Add a proper amount of salt after twenty minutes. Put the boiled eggs in, continue to marinate for about ten minutes, take out the marinated eggs, then continue to fry the marinated meat for about ten minutes and turn off the heat.

Tips:
When the stewed pork is almost cooked, it must be stir-fried continuously, otherwise it will become mushy!
