At the front end of the noon festival, mothers make zongzi,
Someone in the family would be lazy and not to cover themselves.

My mom lives far away, and even if my mom is too old, I started to pack it by myself in the past two years so that my family can also taste my craft😊

I made about 12 small glutinous rice bags per catty...

⚠️This recipe mainly shares the video of making rice, whether to add beans, soy sauce, or peanuts;
In addition to the meat, do you want to add millet, dried shrimp, or salted egg yolk;
Everyone can come according to their own taste, don’t have to worry about it😊

Ingredients

1. Wash the glutinous rice and various beans, and soak for 3-4 hours to remove and drain the water. Add 5 grams of thirteen incense, half a teaspoon of dark soy sauce, one teaspoon of light soy sauce, one teaspoon of oyster sauce, salt, and peanut oil. Mix well. Then take 4 pieces of garlic and chop it into small pieces. Turn on a low heat in a large frying pan. Pour in the appropriate amount of peanut oil and stir-fry the pesto garlic. Pour in the mixed glutinous rice and stir-fry for 10 minutes to let cool. ⚠️The saltiness and lightness can be adjusted according to their own tastes. You can also take a few 10 scallops, soak and wash them, crush them, and stir fry the glutinous rice with garlic.

2. Peel the pork belly, slice it, add a piece of dark soy sauce, light soy sauce, chicken essence, oyster sauce, and southern milk to taste. I discarded a few mint leaves, mixed and marinated for more than 4 hours or overnight. ⚠️ Marinate the meat before soaking the glutinous rice

3. After soaking the mushrooms, slice them and drain the water. Add garlic, oil, and a small amount of salt. Stir fry over low heat and stir until fragrant. Set aside.

4. Wash the zong leaves and zong ropes, cut off the stalks of the zong pages, and then soak them in boiling water for 10 minutes to pick them up, soaking in boiling water is to make the leaves soft and not easy to rot. ⚠️If you bought dried zong leaves, wash them and boil them in water for 10 minutes to pick them up.

12. 8) Fold the extra part of the pressed leaf close to the right corner, tie it three or four times with a straw rope around the waist, and tighten the slipknot. A four-cornered rice dumpling is complete!

22. You can also leave the rope a little longer at one end, and then tie several knots together for easy lifting

23. Put it into an ordinary gas stove pressure cooker ⚠️ It is better if you have an electric pressure cooker at home

24. Put cold water into the pot, the amount of water is less than the dumplings, you can add a drop of salt and cook together. After the general gas stove pressure cooker is heated on high heat, turn to medium heat and cook for 1 hour. Turn off the heat, then simmer for 30 minutes before opening the lid. (If the zongzi is relatively large, it takes longer time, pay attention to enough water to avoid boiling dry) ⚠️The amount of water in the electric pressure cooker must also be less than the zongzi, press the "bean/ tendon" function key to cook and keep it warm for 1 hour (the whole process is about two hours)

25. Ordinary gas pressure cooker is boiled and the water volume is reduced by about half ⚠️When the electric pressure cooker is cooked, the water volume is basically the same, because the cooking process is more airtight, the heating is more uniform, and the finished product will be softer

Tips:

1) I have tried cooking with ordinary gas pressure cooker and electric pressure cooker, the taste of electric pressure cooker is better, and there is no need to worry about boiling water.
2) The 24mm pressure cooker can cook about 15-16 pieces each time, and 3 catties of rice can be done in just two pots
3) When cooking, you can add a drop of salt to the first pot of water. When cooking the second pot, use the remaining water in the pot to add to the amount of water used for the rice dumplings, without adding salt.
4) It is recommended to stir-fry the glutinous rice after soaking and draining the rice, as Yibao is more fragrant.
