Iced Honey Bitter Gourd

Wash the bitter gourd and cut it apart longitudinally.

Use a metal spoon to scoop out the white flesh and scrape it clean. The cleaner the better, the white part is the most bitter.

Slice, don't cut too thin, about 5mm thick.

Add 1 teaspoon of salt to the sliced bitter gourd slices and marinate for about 15 minutes.

Boil a pot of boiling water, put 1 teaspoon of salt, 2~3 drops of cooking oil, put the bitter gourd in boiling water and blanch it for half a minute, remove it and let it cool, and then rinse it with cold water to drain the water.

Put the drained bitter gourd slices into 3 tablespoons of honey, mix well and put on a plate, cover with plastic wrap and store in the refrigerator for 1 hour.

When eating, you can put it in an ice bowl to keep it cool, or you can prepare a small plate of honey for glutinous food.

But generally speaking, if you don’t entertain guests, who would do that and just serve the table.
Tips:
Go hard:
1. The cleaner the white melon flesh is, the better.
2. Marinate with salt for a while to get rid of some bitter juice.
3. Blanching in salt water further removes the bitter taste, and combined with edible oil can make green vegetables more vivid.
4. The bitterness is even less obvious after being iced.
