Jam Sandwich Biscuits

The butter is softened at room temperature and can be easily pressed with your fingers.

Add powdered sugar, use an electric whisk at low speed to mix the butter and powdered sugar evenly, the butter is fluffy.

Add egg liquid in portions and mix well. Mix well before adding egg liquid each time to prevent oil and water from separating.

Add the sifted low-gluten flour and mix the flour and butter paste with a rubber spatula.

Put the well-mixed cookie dough in the refrigerator for half an hour.

The refrigerated dough is rolled out flat, and the pattern is pressed with a mold. One piece is rounded out with a piping nozzle in the middle of the pattern, and the other is a complete pattern. The two pieces are matched together to make a jam-filled biscuit.

Arrange the biscuits into the baking tray, leaving a certain gap.

In the oven, heat up to 140 degrees and lower to 150 degrees. After preheating, put it into the middle layer and bake for 20 minutes. After baking, take it out of the oven and let it cool before spreading jam.
Tips:
1. To soften the butter when the temperature is low, put the butter in warm water at 30-40°C to help the butter soften as soon as possible. If in summer, cut the butter into small pieces and let it soften at room temperature.
2. The dough before shaping should be refrigerated for half an hour. If the refrigerating time is too long, the dough will easily crack when rolling. If the refrigerating time is too short, the dough will be too soft to move the biscuits to the baking tray.
3. In order to make the color more beautiful, a low temperature is used for baking for a relatively long time. It must be emphasized that the performance of each oven is different, and the thickness of the rolled dough is not the same. Be sure to observe the coloring of the biscuits more.
