Japanese Matcha and Red Bean Toast

Except butter and salt, knead all the ingredients until they spread, add butter and salt and knead until completely.
Divide into two portions, one portion can be slightly smaller, add 5 g of matcha powder and knead well.

After spheronization, it will ferment at about 28 degrees to double its size.
Put it in an air-conditioned room for fermentation in summer.

Vent the dough after basic fermentation, round again and relax for 10 to 15 minutes.

Roll out the white dough into a rectangular sheet with a width slightly narrower than the toast mold.

Do the same with matcha noodles.

The white noodles are covered with honey red beans, and the surrounding area is left empty.

Fold the matcha noodles on the white noodles and press them all around.

Roll up.

Pinch your mouth tightly.

Close the mouth down and put it into the mold.

The final fermentation is carried out in a warm and humid place around 38 degrees. Press the dough with your fingers and slowly rebound, that is, fermentation is complete.
The surface of the fermented toast should be very smooth, slightly elastic and not sticky. It is not smooth and sticky.

Bake for 35 minutes in the lower and upper heat of the preheated 180 degree oven. The fire time is adjusted according to your own oven.

After 10 minutes, the height is basically set, the surface is colored, and the tin foil can be covered.

Shake out the oven and release the mold, put the grilling net to cool until the hand temperature is sealed and preserved.

Tips:
1: If you want the toast to grow taller, you must knead out the film, but the film should not be too thin. If it is too thin, there will be no tension. It must be thin and not easy to break. This is a good dough.
2: During operation, apply a little oil on the rolling pin, otherwise it will be sticky. If it is too sticky, you can use a little hand powder. Note that no matter it is oil or hand powder, it should not be too much, too much will affect the final product tissue.
3. I use a Whirlpool 321t steam oven
