Japanese Style Brown Sugar Red Bean Dumpling Ice
1.
If you add some noodles and cornstarch to the glutinous rice flour, the dumplings will not be too sticky. You can also use glutinous rice flour directly.
Friends who do not have Okinawa brown sugar can also use ordinary sugar, but if you can buy it, you can try it. I like the taste very much;
The red beans have been soaked all night;
Put the milk to room temperature;
2.
Put the red beans in the soup pot, add 1 liter of water to boil and turn to medium heat;
3.
After soaking, the red beans can generally be boiled in half an hour to an hour. If it is Cantonese-style red bean paste, I would crush the red beans with a spoon to make the sand. But for this Japanese version, I will leave the whole red bean cubes;
4.
After the red beans are boiled, add brown sugar, turn off the heat, and melt the sugar with the remaining heat. I plan to serve it with ice cubes, so I put 150 grams of sugar to make it a little sweeter;
5.
Now let's make dumplings. Put all kinds of flour into a large bowl. The amount of glutinous rice flour, cheng noodles, and corn flour does not need to be too accurate. For glutinous rice flour, add 1 tablespoon of glutinous rice flour and 1 tablespoon corn flour. Add 1 tablespoon of sugar to taste and stir;
6.
Prepare about 100 ml of room temperature milk, pour it in several times, stir with a mixing spoon, and then knead it into a dough with your hands. Different types of flour absorb water to different degrees. Increase or decrease the amount of milk appropriately so that the kneaded dough won't stick to your hands and will not easily crack;
7.
Knead it into a small ball and press it in the middle with your index finger. It is about 1 inch long. I think the taste is the most suitable.
8.
Boil a pot of water, add small balls, cook until they float, add half a cup of cold water, and boil again, add cold water twice to make sure the balls are cooked;
9.
Put it in ice water immediately after it is cooked. You can put it in the refrigerator for a while. After the red bean syrup is ready, put it in the refrigerator. You can make the balls before each time you want to eat them;
10.
Serve with ice cubes, crushed ice or shaved ice.
