Japanese Tonkotsu Ramen

Barbecued pork: peeled pork belly, rolled into meat rolls, and tied tightly with cotton thread.

Pour a small amount of oil in the pan to fry the rolled pork belly and color it.

Add rock sugar and boil until it is browned, so that the pork belly is covered with caramel.

Then pour in an appropriate amount of thick soy sauce (use soy sauce if you don't have it) and add a little mirin. Then change to a saucepan, pour in appropriate amount of water, add green onion/ginger slice/ appropriate amount of salt, cover and stew for 1 hour, put it in the refrigerator with the soup for 2 hours and then slice it.

Bone soup: boil pork bones with shallots/ginger slices/ cooking wine/sufficient water for more than 4 hours (you can also add a few drops of white vinegar to make the bone soup whiter) when the soup is boiled to milky white, remove the bones.

After the water is boiled, add the eggs and boil for 6 minutes, immediately remove the cold water to complete the soft-boiled eggs. Tips:
This should be considered as the soup for soy sauce ramen. It's salty and rich, and the last drop of soup is not full of pleasure. Some Chinese ramen chains use bone meal to compare with the real ones, and despise them!
