Jiangxi Rice Noodle Fish

Grass carp fish requires the belly part of the meat, without big bones, and can be cut into thin slices.

1 pack of Jiangxi rice noodles.

Pour water into the pot without boiling, add rice noodles directly, turn off the heat and simmer for fifteen minutes after the water is boiled, remove the cold water and dry water.

Put the rice noodles in a basin, add dark soy sauce, add sesame oil and mix well.

Cut the fish into thin slices with an oblique knife.

Add salt, soy sauce, sesame oil, chopped pepper, cooking wine, and ginger slices and mix well. Add some spicy sauce to taste even better.

Marinate the fish fillets for one hour, mash the fish fillets with cornstarch, spread the rice noodles on a plate, and then spread the fish fillets on the rice noodles.

Bring to a boil, put the plate in the pot and steam for 15 minutes. Adjust the soy sauce with water and add water to the starch to thicken the thickener. After steaming for 5 minutes, sprinkle the chopped green onion out of the pot.
Tips:
Cut the fish fillets as thin as possible. For the fish, buy grass carp, and buy the meat with no big bones in the belly!
