Jiangxi Rice Noodles

Soak Jiangxi rice noodles in a basin of water until soft.

Heat a pot of clean water, add rice noodles when boiling, cook for about three minutes, remove, immediately put in cold water, rinse another slice, drain the water and set aside.

Drain the rice noodles and set aside. Cut cucumbers and carrots into shreds (change according to personal preference), and finely chop scallions, ginger and garlic.

Stir-fry the ingredients in a hot pan with oil. When the heat is up, pour the cool and tender rice noodles into the pan and turn off the heat.

Add light soy sauce, homemade or purchased chili sauce, and stir well.
6.
The spicy and delicious rice noodles are successfully completed when they are served on the plate.
