Stir-fried chicken with cashew nuts, a very classic dish, with cashew nuts and diced chicken as the main ingredients, I specially added some colored peppers to add color, and the visual and taste are much more enhanced. Because this dish is very rich in color matching to the variety of ingredients, so I gave it an appropriate name-Jinyu Mantang, a good luck in the festival.

Jin Yu Man Tang·cashew Nut Chicken

1. Chicken thighs are peeled and deboned.

2. Cut into cubes. Add 1 tablespoon of light soy sauce, 1 teaspoon of sugar, and 1 tablespoon of starch, marinate for 10 minutes.

3. The cashews are fried and crispy in advance.

4. Cut the colored pepper into small pieces.

5. Slice garlic and chop green onions.

6. Heat the oil, add the marinated chicken and stir fry.

7. When the color turns white, stir fry with the onion and garlic.

8. Cook into the cooking wine, 1 teaspoon of soy sauce, and some salt.

9. Stir-fry colored peppers.

10. Finally, pour the cashews into the pan and stir well and turn off the heat immediately.

11.

Tips:

If the cashew nuts are fried in advance, this step can be avoided if they don’t need crispness.
Color peppers can also be green and red peppers, just put them as you like.
