Jinsha Tofu

1. Prepare the ingredients.

2. Peel the fish and cut into small pieces.

3. Wash the green and red peppers and chives and cut into small pieces.

4. Peel the cooked salted duck eggs and leave the yolk. Sift the egg flowers into a velvet shape.

5. Rinse the soft tofu with water, cut off the skin; slice into 9 pieces.

6. The sliced tofu is placed on a plate in the shape of a product.

7. Put the prepared tofu in a pot of boiling water and steam for 5 minutes.

8. Marinate the cut fish with a little salt and starch for a while.

9. Heat the oil in the pot, add salted egg yolk and fry it into a sand.

10. Add the fish cubes and stir-fry well; just coat the fish with egg yolk.

11. Wrap the fish cubes with egg yolk and put them on the tofu.

12. Drizzle the remaining egg yolk on the tofu. Sprinkle with green red peppers and chives for garnish.
