Jujube Cake

The jujubes are pitted first, and the water is boiled and steamed in a pot for 3-5 minutes. Simmer for 2 minutes.

Take out the steamed dates. Let cool slightly.

Add milk and milk with a food processor to make jujube puree. (You can also add water to make jujube puree)

The eggs are separated, and the yolk is added to the jujube puree. Stir in fresh milk and set aside.

Beat the separated egg whites with a whisk. Add brown sugar to the egg white two to three times. Keep going. (During this period, a little bunny has been making trouble 😂😂😂)

Add the jujube puree to the flour and mix well, then add the beaten egg whites in three times. When stirring, be sure to turn and stir, don't stir in circles because it defoams. Add baking powder and yeast while stirring.

Line the baking tray with greased paper and pour the jujube puree into the baking tray. Preheat the oven at 175°C for ten minutes. (A chubby hand appears again 😁😁😁)

Pour into the baking tray and smooth the surface. Put it in the preheated oven.

Put it in the oven and continue to bake at 175℃ for 40 minutes. You can eat the fragrant jujube cake. The smell of dates will be floating in the room after baking for a while.

Let cool and cut into pieces after baking. The size is as you like. I cut smaller ones. Suitable for my baby to eat. 😄😄😄
